Teriyaki Portabella Mushroom Bowl

Looking for a healthy "Meatless Monday" meal? This teriyaki portabella bowl is delicious; nutritious; and the prep time is only 15 minutes, which is my kind of meal after a long work day. Below you will find the recipe for this bowl.


Ingredients:

  • portabella mushroom cap

  • red peppers

  • frozen stir fry veggies + edamame

  • frozen quinoa (I used Simple Truth brand)

  • extra virgin olive oil

  • garlic

  • parsley

  • teriyaki (I used Primal Kitchen Foods brand)


Instructions:

  • mix 1 tsp of olive oil; garlic; teriyaki; and parsley in a small bowl

  • brush sauce on mushroom and red peppers

  • put mushroom and peppers on the grill, and cook for about 10 minutes

  • sauté stir fry veggies & edamame with a little EVOO on medium to high heat for about 5 minutes

  • microwave quinoa for 4-5 minutes while stir fry and grilled veggies are cooking

  • put 1/2 cup quinoa; 1/2-1 cup of stir fry veggies +edamame; portabella; and peppers in a bowl, and drizzle with a little teriyaki

  • enjoy!

Healthy Tip: Consider keeping frozen veggies stocked in the freezer. This is a great way to save time and money. Frozen veggies are also picked when they are perfectly ripe, therefore they contain even more nutrients and flavor.
